Fresh Herb Tea Anyone?

This soothing tea uses garden-fresh herbs, ginger root and lemon zest for a truly special treat. Serve with honey on the side for those who like their tea a little bit sweeter.

~ Fresh mint leaves, loosely packed - 1/4 cup/ 60 mL
~ Fresh basil leaves, loosely packed - 2 tbsp./ 30 mL
~ Fresh sage leaves - 2
~ Sprigs of fresh thyme (about 5 inch, 12.5 cm, length) - 2
~ Lemon grass, bulb only - 1
~ Piece of ginger root (1 inch, 2.5 cm, length) - 1
thinly sliced
~ Grated lemon zest 1 1/2 tsp./ 7 mL

Boiling water 6 cups 1.5 L

Rinse large teapot with hot water to warm. Add first 7 ingredients.

Pour boiling water over herb mixture. Let stand, covered, for 10 minutes. Strain through sieve into 6 cups. Makes about 6 cups (1.5 L).
