Yummy! I'm going to make this with my daughter this weekend. Do you know what the eggs are for? Why are they needed in the recipe?

I would think to give it some body and texture -But rest assured, if they call for it they are needed.
Company's Coming are my Bible of cookbooks. I use them all the time and I think I must have all of them. I've NEVER made a recipe that I didn't like...they're the BEST.
